Directions

  1. Begin by filling the cocktail shaker/mason jar with about two thirds of ice.
  2. Pour the bourbon, Nature’s Flavors Pure Organic Maple Syrup, lemon juice, and a pinch of cinnamon into the shaker/jar.
  3. Close the lid and shake well. Shake, shake, shake! Set aside.
  4. Prepare your serving glass with ice and pour the cocktail into the glass.
  5. Slice up a few apples and place them into the cocktail.

Thanksgiving Vegan Carrot Cake

Everyone and their momma has pie during the holidays, it’s almost like an unspoken tradition. With that being said, why not change it up a bit and have cake instead? We put together this delicious Thanksgiving Vegan Carrot Cake!

Ingredients

Vegan Carrot Cake

  • Nature’s Flavors Coconut Oil (⅓ cup)
  • Applesauce (1 scant cup)
  • Brown sugar (½ cup)
  • Nature’s Flavors Organic Sugar-free Sugar
  • Nature’s Flavors Organic Pure Maple Syrup (½ cup)
  • Almond flour (1 ½ cups)
  • Gluten-free flour blend (1 ½ cups)
  • Salt (¾ teaspoon)
  • Baking soda (1 ½ teaspoon)
  • Ground cinnamon (1 teaspoon)
  • Baking powder (1 ½ teaspoon)
  • Unsweetened soy milk (¾ cup)
  • Flax egg (3 tablespoons of flaxseed meal + 7 ½ tablespoons of water)
  • Grated carrot (1 ½ cup)

Vegan Carrot Cake

  1. Begin by preheating your oven to 350°.
  2. Prepare your round baking pan with non-stick cooking spray and set it aside.
  3. In a large mixing bowl, make the flax egg.
  4. Add in Nature’s Flavors Coconut Oil, Nature’s Flavors Maple Syrup, salt, baking soda, sugars, applesauce, cinnamon, and baking powder to the bowl. Whisk everything together to form a smooth consistency.
  5. Once everything in the bowl has been combined, add in the soy milk. Stir very well.
  6. Add the grated carrots, almond flour, and gluten-free flour to the bowl. The batter should be of a thicker consistency however, you should still be able to easily pour it.
    1. If the batter is still too thick, add a little more milk.
  7. Divide the batter evenly amongst the round cake pans. We decided to use a mini baking pan in our recipe. However, feel free to use whichever size your little heart desires!
  8. Bake the cake for 40 – 50 minutes or until a toothpick poked in the center of the cake comes out clean.
  9. Allow the cake to cool completely before frosting.

Buttercream Frosting

  1. Beat the vegan butter until it becomes fluffy. It’s best to do this when the butter is at room temperature.
  2. Once the butter becomes fluffy, beat in Nature’s Flavors Organic Powdered Sugar.
  3. Add in the milk and Nature’s Flavors Organic Vanilla Extract.
  4. Cover the Carrot Cake with the Buttercream Frosting.

Directions

  1. Begin by preheating your oven to 400°.
  2. Prepare a baking sheet by lining it with parchment paper and spraying it with non-stick cooking spray. Set aside.
  3. Wash and peel the sweet potatoes. Cut and slice them into ¼” thick rounds.
  4. In a microwave safe bowl, melt the butter.
  5. Add Nature’s Flavors Organic Vanilla Flavor Oil, Amaretto Flavor Oil, and the Hazelnut Flavor Oil to the butter. Mix until everything is well combined.
  6. Add in Nature’s Flavors Organic Pure Maple Syrup to the mixture.
  7. Lastly, add in the brown sugar and stir until the mixture is smooth. This will be your “candied butter mixture”.
  8. Toss the sliced sweet potato rounds onto the baking sheet.
  9. Using a pastry brush, coat each sweet potato round with the candied butter mixture.
  10. Bake on each side for 12 minutes. Flip each of them over and bake them for another 12 minutes.
  11. Carefully remove the baking sheet from the oven and add a single marshmallow to the top of each sweet potato.
  12. Bake them for 1-2 more minutes.
  13. Remove them from the oven and top each of the rounds with a pecan half.
  14. Enjoy your Candied Sweet Potato Rounds!
