It’s Valentine’s Day week y’all and we’re here with this yummy Chocolate Strawberry Fudge! This fudge is like eating a chocolate covered strawberry, absolutely delicious. Let’s get this ball rolling!

Ingredients
Shortbread
- Almond flour (1 cup)
- Unsalted butter (8 tablespoons, soft)
- Nature’s Flavors Organic Vanilla Extract (2 teaspoons)
- Salt (¼ teaspoon)
- Nature’s Flavors Sugar Free SweetenFX Sugar for Baking (½ cup)

Fudge
- Unsalted butter (8 tablespoons, soft)
- Mini marshmallows (2 ½ cups)
- Heavy cream (¾ cup)
- Nature’s Flavors Organic Vanilla Extract (2 teaspoons)
- White chocolate chips (2 cups)
- Nature’s Flavors Sugar Free SweetenFX Sugar for Baking (1 ½ cups)
- Red Sugar Sprinkles (to garnish)
- Nature’s Flavors Organic Strawberry Extract (2 teaspoons)
- Salt (½ teaspoon)
Directions
Shortbread
- Begin by preheating your oven to 310°.
- Prepare a baking pan with parchment paper.
- Start by making the shortbread. Combine the softened butter, Nature’s Flavors SweetenFX Sugar, Nature’s Flavors Organic Vanilla Extract, and the salt in a mixing bowl.
- Add the almond flour until the dough forms.
- Press the dough onto your prepared pan.
- Using a fork, make small pricks all over the dough
- Place it in the oven for about 30 minutes or until the edges reach a golden brown color.
- Once the shortbread has baked, place it on a cooling rack and allow it to set while you make the fudge.
Fudge
- Prepare a baking pan with parchment paper and spray it with non-stick cooking spray. Set aside.
- Combine the butter, heavy cream, marshmallows, Nature’s Flavors SweetenFX Sugar, and salt in a large saucepan. Stir all of the ingredients together on medium heat.
- Once the mixture comes to a boil, stir in Nature’s Flavors Organic Vanilla Extract and Nature’s Flavors Organic Strawberry Extract. Keep stirring until everything is well combined.
- Turn off the heat and add in the chocolate chips. Stir until the chocolate chips completely melt.
- Carefully pour a small and even layer of fudge onto the prepared baking sheet.
- Scatter pieces of shortbread throughout that first layer. Then add another layer of fudge and another layer of shortbread. Repeat this process until all the fudge is gone.
- We added red sprinkles to really get us into that Valentine’s Day spirit!
- Allow the fudge to set for about 5 to 6 hours.
