Delicious Raspberry Variegate for Frozen Yogurt and Ice Cream

Ingredients
  

  • 1.5 lb Fresh Raspberry
  • 1.5 lb Fresh Blueberry
  • 4 mL Nature's Flavor Raspberry Flavor Concentrate
  • 600 g Organic Rice Syrup
  • 800 g Organic Cane Sugar
  • 168 g Organic Starch
  • 20 g Organic Pectin
  • 100 mL Water

Instructions
 

  • In a bowl, combine all the dry ingredients, such as organic cane sugar, starch, and pectin.
  • Put the water in the kettle and bring it to a boil.
  • Pour the dry mixture into the steaming water and mix until the blend reaches a thick consistency.
  • Once the liquid reaches the desired thick consistency, pour the organic rice syrup.
  • Pour the raspberry and blueberry and let it cook. Gradually, the raspberry will melt into the liquid mixture, and the blueberry will soften.
  • Once the mixture's temperature reaches 185 F, add the Nature’s Flavors Raspberry Flavor Concentrate and combine everything.
  • While the mixture is still hot, transfer it over to a clean mason jar.
  • Seal it with a lid and flip the mason jar upside down. Let it rest for a while. 
  • Afterwards, soak the mason jar in a warm water bath and slowly introduce it to cold water.
  • Refrigerate after cooling. If stored properly, the variegate will last a year in the fridge.
