Chocolate Strawberry Fudge

It’s Valentine’s Day week y’all and we’re here with this yummy Chocolate Strawberry Fudge! This fudge is like eating a chocolate covered strawberry, absolutely delicious. Let’s get this ball rolling!

Directions

Shortbread

  1. Begin by preheating your oven to 310°.
  2. Prepare a baking pan with parchment paper.
  3. Start by making the shortbread. Combine the softened butter, Nature’s Flavors SweetenFX Sugar, Nature’s Flavors Organic Vanilla Extract, and the salt in a mixing bowl.
  4. Add the almond flour until the dough forms.
  5. Press the dough onto your prepared pan.
  6. Using a fork, make small pricks all over the dough
  7. Place it in the oven for about 30 minutes or until the edges reach a golden brown color.
  8. Once the shortbread has baked, place it on a cooling rack and allow it to set while you make the fudge.

Fudge

  1. Prepare a baking pan with parchment paper and spray it with non-stick cooking spray. Set aside.
  2. Combine the butter, heavy cream, marshmallows, Nature’s Flavors SweetenFX Sugar, and salt in a large saucepan. Stir all of the ingredients together on medium heat.
  3. Once the mixture comes to a boil, stir in Nature’s Flavors Organic Vanilla Extract and Nature’s Flavors Organic Strawberry Extract. Keep stirring until everything is well combined.
  4. Turn off the heat and add in the chocolate chips. Stir until the chocolate chips completely melt.
  5. Carefully pour a small and even layer of fudge onto the prepared baking sheet.
  6. Scatter pieces of shortbread throughout that first layer. Then add another layer of fudge and another layer of shortbread. Repeat this process until all the fudge is gone.
  7. We added red sprinkles to really get us into that Valentine’s Day spirit!
  8. Allow the fudge to set for about 5 to 6 hours.

Ingredients

Cinnamon Oat Base

  • Almond flour (2 cups)
  • Brown sugar (1 cup)
  • Ground cinnamon (½ teaspoon)
  • Baking powder (1 teaspoon)
  • Old fashioned oats (2 cups)
  • Salted butter (1 cup)

Raspberry Filling

Directions

  1. Begin by preheating your oven to 350°.
  2. Prepare a baking sheet with parchment paper. We sprayed the parchment paper with non-stick cooking spray just in case. Set aside.
  3. Combine the oats, brown sugar, almond flour, cinnamon, and baking powder in a food processor. Pulse until the mixture is almost ground.
  4. Add in the butter and pulse until the mixture becomes a crumbly dough-like consistency.
  5. Press the cinnamon oat base into the bottoms of the prepared baking sheet.
  6. Bake the base for 10 minutes.
  7. While the base is baking, make the raspberry filling. Combine the raspberries, flour, brown sugar, Nature’s Flavors Organic Vanilla Extract, and lemon zest in a mixing bowl.
  8. Mix everything together with an electric mixer. Don’t overmix, it’s okay to have pieces of raspberries in the mixture.
  9. Take out the cinnamon base from the oven and create a even layer of the raspberry filling all across the baking sheet.
  10. We sprinkled lemon zest and oats on top of the raspberry filling to give it a little extra touch.
  11. Bake for 30-35 minutes.
  12. Allow the bars to completely cool before cutting and serving.
