Vegan Coconut Mango Mousse

Ingredients
- 3/4 cup Vegan heavy cream
- 3/4 cup Organic Mango Puree
- 1-2 tbsp Organic Coconut Syrup
- 1/2 – 1 tbsp Organic Mango Syrup
- 1 tbsp Granulated Sugar
Instructions
- Add the mango puree and syrups into a blender and blend until smooth. Set aside.
- In a large mixing bowl, use an electric hand whisk to whip the cream and sugar until soft peaks or about 5-8 minutes. Ensure you don’t over whip or over beat the cream.
- In a separate bowl, slowly fold the mango mixture into whipped cream, and stir with a spatula. Be sure not to over mix to avoid the whip cream losing its fluff.
- Pour the ready mango mousse in glasses and refrigerate for at least 3 hours, for best results overnight.
- Take out from the fridge, decorate with freshly chopped mangos, coconut flakes, and mint. Enjoy!
