Vegan Mango Popsicles

Since the weather is getting warmer, we’re creating snacks and treats to help keep you cool! We’ve created this Vegan Mango Popsicles Recipe to help fight that heat. There’s no messy mango cutting involved either. All you need is a bit of our delicious mango concentrate to get that delicious mango flavoring. We also added some of our orange food coloring to really get that mango vibe going! Shall we begin?

Ingredients

The Breakdown

  1. Begin by mixing 2 cups of vanilla greek yogurt, ½ a cup of soy milk, and 2 tablespoons of Nature’s Flavors SweetenFX.
  2. Add in ½ teaspoon of Nature’s Flavors Organic Mango Concentrate and mix! Make sure that the concentrate is evenly distributed.
  3. Next, add in that beautiful natural orange food color! We used ½ a teaspoon but feel free to adjust to your liking.
  4. Now that your mixture is ready, you can begin pouring it into your dixie cups. We used the smaller dixie cups and filled them up about ¾ of the way.
  5. We used coconut shreds on a few of our popsicles but feel free to use any toppings you’d like.
  6. Place a popsicle stick in the center of each dixie cup.
  7. Freeze the popsicles and allow them to set for 5-6 hours.

Rise n’ shine friends! It’s Wednesday so that means we’re half way through this week! Today, our friend Stephie from @localeats.sweettreats, has created these Gluten-free Blueberry Banana Pancakes! She was kind enough to share her delicious recipe with us too.

Gluten-free Blueberry Banana Pancakes

Ingredients

  • Vegetable oil (4 tablespoons)
  • Coconut palm sugar (2 tablespoons)
  • Egg (1 egg)
  • Nature’s Flavors Natural Banana Flavor Concentrate (5 drops)
  • Gluten-free flour (1 cup, must include xanthan gum)
  • Frozen blueberries (1 cup)
  • Unsweetened vanilla almond milk (1 cup)
  • Baking powder (1 teaspoon)
  • Salt (a dash)
  • Cinnamon (a dash)

Directions

  1. Begin by beating the egg in a bowl. Add in the sugar, Nature’s Flavors Banana flavor concentrate, and the almond milk. Mix well.
  2. In a seperate bowl, add the flour and the baking powder. Mix both ingredients.
  3. Add the wet ingredients into the dry ingredients. Slowly mix everything together.
  4. Next, add the frozen blueberries, salt, and cinnamon. Mix gently.
  5. Heat the vegetable oil in a medium/large pan on high heat.
  6. Add one ladle of mix onto your pan and flip it once bubble form.
  7. Cook until both sides are golden brown.
  8. Stephie used butterfly pea powder in coconut whipped cream to create a pretty garnish sauce!

Coconut Chocolate Matcha Bars

Desserts that make it seem like you tried really hard but you actually didn’t are our personal favorite. Coconut Chocolate Matcha Bars are proven to make you seem like the ultimate chef guys. This is a no-bake dessert that is somewhat on the healthier side. You don’t have to feel as guilty when devouring these. And in case you have no idea what or how tasty matcha is, read over our matcha 101 article! Let’s get started!

  • Parchment paper
  • Blender
  • Medium microwave-safe bowl
  • Microwave

Coconut Chocolate Matcha Bars

Ingredients

Directions

  1. Begin by lining your baking sheet with parchment paper. Set aside.
  2. We’ll begin by making the base of the matcha coconut bars first. Combine Nature’s Flavors Organic Coconut Shreds, coconut cream, Nature’s Flavors Coconut Oil, and Nature’s Flavors Organic Pure Maple Syrup in a blender. Blend all of the ingredients together until you reach a stickier consistency.
    • If there are bigger pieces of coconut shreds throughout your mixture, the crumblier your bars will be.
  3. Place the coconut mixture into the prepared baking pan. You’ll want to press down and make sure that it is tightly packed. Set aside.
  4. Using a microwave-safe bowl, melt the chocolate chips in the microwave in 30 second increments to avoid the chocolate from burning. Remember to stir thoroughly in between the heating increments.
  5. Next, pour the melted chocolate over the matcha coconut bars. Use a rubber spatula to make sure everything is smooth and even.
  6. Place the baking pan in the freezer for an hour before serving.
