Marcy Goldman's London Fog Earl Grey Cake

A creation that takes a detour from the usual Red Velvet approach and is a gorgeous celebration cake made unique and extra flavorful with organic Earl Grey Flavor Concentrate from our friends at Nature’s Flavors.

This is one hot and trendy cake! It features all the elements of an Earl Grey Latte (whipping cream, vanilla and Earl Grey tea) in a cake but it also features the sumptuous flavor notes of Organic Earl Grey flavor concentrate from our friends at Nature’s Flavors. This cake is beyond a keeper and celebration cake; it’s an instant classic and perfect for Valentine’s Day.

For the earl grey tea flavor, find a strongly flavored, flowery Earl Grey tea to use. For the vanilla paste, use Nielsen Massey brand or the scrapings of Nielsen Massey vanilla beans. However, the real capper is the Earl Grey concentrate from Nature’s Flavors. The tea flavor on its own is somewhat delicate, but the natural Earl Grey concentrate is a game changer. Ingredients

Earl Grey Simple Syrup

London Fog Earl Grey Cake

White Chocolate Ganache

  • Whipping cream (1 cup)
  • White chocolate (1 ½ cups, chopped)

Cake

  • Milk (1 cup, warmed)
  • Egg whites (4 egg whites)
  • Eggs (2 eggs)
  • Pure vanilla extract (2 teaspoons)
  • All purpose flour (½ cup)
  • Sugar (1 ½ cup)
  • Salt (⅜ teaspoon)
  • Baking powder (4 teaspoons)
  • Cold butter (¾ cup, diced)
  • Ground earl grey tea leaves (2 tablespoons)
  • Vanilla paste or vanilla beans (2 teaspoons)

Vanilla Buttercream

  • Unsalted butter (1 cup, softened)
  • Confectioners’ sugar (¾ cup, sifted)
  • Salt (⅛ teaspoon)
  • Pure vanilla extract (2 teaspoons)
  • Almond extract (¼ teaspoon)
  • Orange oil (¼ teaspoon)
  • Nature’s Flavors Organic Earl Grey Concentrate (½ teaspoon)
  • Whipping cream (3-4 tablespoons)

Whipped Cream Topping

  • Whipping cream (1 ½ cups)
  • Pure vanilla extract (1 teaspoon)
  • Confectioner’s sugar (2 tablespoons)
London Fog Earl Grey Cake

Directions

Earl Grey Simple Syrup

  1. The night before, in a two-cup measure, add the tea bags, water, vanilla, Earl Grey flavor, and orange oil.
  2. Let it stand and brew overnight.
  3. Strain the next day and place the mixture in a small saucepan with the sugar.
  4. Heat and simmer for 5 minutes.

White Chocolate Ganache

  1. Place the chocolate in a medium bowl.
  2. Heat the cream to scalding and pour over the white chocolate and whisk until smooth.
  3. Refrigerate overnight.

Cake

  1. Begin by preheating the oven to 350°. Generously spray two 9-inch round pans with non-stick cooking spray.
  2. In a medium bowl, whisk the milk, egg whites, eggs, and vanilla together.
  3. In a mixer bowl, blend the flour, sugar, salt, baking powder, ground tea leaves and vanilla bean paste.
  4. Add the butter in bits and mix to make a grainy mixture.
  5. Add in the liquid ingredients and blend for about 3-5 minutes until the batter is smooth.
  6. Pour half the batter into each pan.
  7. Bake until the cake springs back when touched, about 28-32 minutes. Allow it to cool.

Vanilla Buttercream

  1. In a mixer bowl with the whisk attachment, blend the butter and confectioners’ sugar. 
  2. Add in the salt, vanilla, almond extract, orange oil and Earl Grey flavor to the whipping cream and increase speed to make the mixture light and fluffy.
  3. Add in more confectioners’ sugar for the right consistency.

Whipped Cream Topping

  1. Whip the whipping cream with the pure vanilla extract and confectioners’ sugar until stiff peaks form.
  2. Spoon into a pastry bag fitted with a large star tip.

Assembly

  1. To assemble the cake, sandwich the buttercream between the two layers of cake.
  2. Ice the top and sides of the cake with the remaining buttercream.
  3. Allow the cake to chill for 20 minutes.
  4. Meanwhile, rewarm the White Chocolate Ganache to the right consistency and pour it over the cake. Allow it to set for a few minutes.
  5. Dust the cake with the ground earl grey tea leaves and pipe whipping cream rosettes in the center. 
  6. Enjoy this London Fog Earl Grey Cake!
