Vegan Apple Spice Cake with Rum Buttercream

We’re back with another Vegan recipe! This time we created this delicious Vegan Apple Spice Cake with Rum Buttercream Frosting! It’s like fall in a cake so let’s get started!

Directions

Apple Spice Cake

  1. Begin by preheating the oven to 350°.
  2. Prepare the baking pan with non-stick cooking spray to avoid your cake from sticking to your pan.
  3. In a pot over low heat, combine the soy milk and apple cider vinegar. Whisk them together until you begin to see the milk curdle. Set aside.
  4. In a mixing bowl, sift the flour, baking soda, baking powder, all-spice, cinnamon, ginger, and sea salt together. Set aside.
  5. Transfer the curdled milk to a mixing bowl.
  6. Combine the brown sugar, Nature’s Flavors Coconut Oil, Nature’s Flavors Organic Vanilla Extract, and Nature’s Flavors Organic Molasses with the curdled milk. Mix until it’s all smooth. Set aside.
  7. Peel the apple and shred it until you have enough for one cup. We used one large apple.
  8. Add the liquid ingredients and shredded apple into the dry ingredients. Fold until the batter is well combined.
  9. Pour the mixture into your baking pan. Make sure the top is even to ensure that the top of the cake is smooth.
  10. Bake the cake for 20-25 minutes or until a fork/toothpick come out clean.
  11. Allow the cake to cool before removing it from the cake pan.
  12. Once cooled, flip the cake onto your desired cake stand/plate.

Rum Buttercream Frosting

  1. Beat the vegan butter until it becomes fluffy. It’s best to do this when the butter is at room temperature.
  2. Once the butter becomes fluffy, beat in Nature’s Flavors Organic Powdered Sugar.
  3. Add in milk, Nature’s Flavors Organic Vanilla Extract, and Nature’s Flavors Organic Rum Flavor Extract.
  4. Cover the Apple Spice Cake with the Rum Buttercream Frosting.
  5. Press small handfuls of chopped pecans along the sides of the cake.
