This lemon fudge recipe does not contain any true chocolate. In fact, white chocolate is actually a blend of cocoa butter, sugar, and milk. This makes white chocolate a base with high-fat content.
So, what flavoring application do you use for recipes with a high-fat content?
The answer is flavor oils. Flavor oils contain a carrier oil like sunflower or canola along with natural flavors. They’re made from plant-derived materials so you know you’re adding an ingredient you can count on.
Flavor oils can be applied in more than just homemade fudge recipes. They have a variety of uses like flavoring chocolate or naturally flavoring lip balms.
How to Melt White Chocolate
If you’ve ever melted white chocolate you may have found it more finicky than actual chocolate. Since white chocolate is made from cocoa butter, sugar, and milk it has a low melting point. (between 82°-84° F). This means it’s very easy to burn and ruin white chocolate.
Here are a few ways to keep you from ruining white chocolate, especially for this homemade fudge recipe.
Melt with a Microwave
One of the easiest and best ways to melt white chocolate is by using a microwave. In a microwave-safe bowl, the white chocolate will rotate and melt more evenly. It’s crucial to microwave in two increments of only 20 seconds. Stir the white chocolate after each increment.
But if you’re not crazy about using microwaves, you can try the double broiler method. Just know, that you can’t walk away from the white chocolate when using this method.
Avoid Water and Other Liquids
Remeber, white chocolate has an oil-base so adding water-soluble ingredients into the mix will cause the chocolate to seize or become lumpy. Luckily, this can be resolved by adding in a bit more white chocolate.
Stick to an oil-friendly ingredient like coconut oil if you plant to add anything else into the mixture.

Homemade Fudge Recipe with Lemon
Equipment
- 1 Microwave
- Spatula
- 1 Baking Pan
- Measuring Spoons
- Mixing bowl Microwave Safe
Ingredients
- 20 oz White Chocolate Wafers
- 14 oz Sweetened Condensed Milk
- 4 oz Softened Butter
- 2 tsp Organic Lemon Flavor Oil
- 1 tsp Natural Yellow Food Coloring oil-soluble
- 2 tbsp Powdered Sugar
Instructions
- Add the white chocolate chips, butter and, condensed milk into a microwave-safe mixing bowl.
- Microwave the ingredients in two 20-second increments until chocolate chips are melted. Stir ingredients with a spatula after each increment.
- Once the ingredients are melted, add in the lemon flavor oil and natural food coloring.
- Spray the baking pan with nonstick cooking spray or line with parchment paper. Add the lemon fudge mixture into the baking pan.
- Refrigerate the fudge for at least 2 hours. After two hours, slice the fudge and enjoy.
