Low Carb Gluten-free Apple Pancakes

One of our followers over on Instagram, @livinggrit, created these amazing low carb gluten-free apple pancakes! Kristina uses our Organic Green Apple Extract to give her pancakes that extra kick. Low Carb Gluten-free Apple Pancakes

Ingredients

Low Carb Gluten-free Apple Pancakes

  • Cream cheese (4 ounces, room temperature)
  • Eggs (4 large eggs)
  • Nature’s Flavors Organic Green Apple Extract (½ teaspoon)
  • Apple cider vinegar (1 tablespoon)
  • Almond flour (¾-1 cup, the thickness of your pancakes will depend on your personal preference)
  • Salt (¼ teaspoon)
  • Baking powder (2 teaspoons)
  • Coconut flour (2 tablespoons)
  • Low carb sweetener of your choice (a pinch)

The Process

Low Carb Gluten-free Pancakes

  1. Begin by placing the cream cheese, the eggs, Nature’s Flavors Organic Green Apple Extract, and the apple cider vinegar in a blender. Blend well and set aside.
  2. In a mixing bowl, combine the almond flour, coconut flour, salt, baking powder, and your low carb sweetener. Mix well.
  3. Add the dry ingredients into the blender and blend well.
  4. Butter up a hot pan and pour the batter like you would with a traditional pancake.
  5. Kristina recommends making the pancakes 3 to 4 inches in diameter so that they are easier to flip. Pancakes without gluten can be more delicate to move around in the pan.

  1. Begin by melting the butter in a bowl.
  2. Add in the water, Nature’s Flavors Organic Maple Extract, and a pinch of your low carb sweetener. Mix well.
  3. Pour the low carb gluten-free maple butter on your pancakes.
  4. Enjoy!
