Sugar-free pumpkin bread with a caramel glaze? You read that correctly! Halloween is fast approaching so we decided to celebrate the occasion with pumpkin bread! This isn’t any ol’ pumpkin bread though, we made this sugar-free AND we added a delicious caramel glaze on top. It’s easy and the perfect treat for the season!

Let’s begin!

Pumpkin Bread

Here is what you’ll need

  • All-purpose flour (2 cups)
  • Ground nutmeg (1 teaspoon)
  • Ground cinnamon (1 teaspoon)
  • Ground cloves (1 teaspoon)
  • Salt (1/2 teaspoon)
  • Baking powder (1/2 teaspoon)
  • Baking soda (1 teaspoon)
  • Unsalted butter (1 1/2 sticks, softened)
  • Pure pumpkin (15 oz.)
  • Nature’s Flavors SweetenFX for Beverages (2 cups)
  • Eggs (2 eggs, large)

Begin by preheating your oven to 325°F. Grease a 8 x 4 in. loaf pan with non-stick cooking spray and set aside. In a mixing bowl, pour 2 cups of flour. Next, add 1/2 teaspoon of salt into your mixture.

Add 1 teaspoon of baking soda and 1/2 teaspoon of baking powder.

Next, comes the ground cloves! Add 1 teaspoon of ground cloves into your mixture. After adding the ground cloves, add 1 teaspoon of cinnamon.

Next, add 1 teaspoon of ground nutmeg into the mixture. After you’ve poured all of your dry ingredients into your mixing bowl, whisk them all together.

Set the dry ingredients aside and in another mixing bowl, add 1 1/2 sticks of softened butter. Since this pumpkin bread is sugar-free, we added our SweetenFx! Two cups to be exact!

Using an electric mixer, combine the sugar and the butter together. It may still be grainy but that’s okay! Next, add 2 large eggs to the mixture. Beat well!

After the butter and sugar mixture have reached a fluffy consistency, slowly begin to add the pure pumpkin. Next, fold the wet ingredients into the dry ingredients. Mix well!!

Transfer your batter into your prepared loaf pan and place it in the oven for 65-70 minutes.

Caramel Glaze

Here is what you’ll need

  1. Combine the SweetenFX, milk, and Nature’s Flavors Caramel extract in a mixing bowl. Mix with an electric mixer until glaze begins to thicken. 
  2. Once the pumpkin bread cools for about 30 minutes, glaze it with the caramel glaze and enjoy!

  • 1/8 teaspoon Nature's Flavors Organic Caramel Extract
